The OMG burger


4 good quality chicken breasts
Taste-neutral cooking oil
Salt and freshly ground pepper
Lettuce or arugula
2 large tomatoes
1 onion or shallot
4 good burger buns – e.g. whole wheat

1 tbsp. cayenne pepper
1 tbsp. turmeric
1 tbsp. paprika
1 tbsp. salt
1 tbsp. brown sugar

Sweet & Spicy dressing:
2 dl mayonnaise
1 dl sweet chili sauce
1 fresh chili, finely chopped
1 tbsp. fresh ginger, finely grated
Salt and freshly ground pepper
Extra sweet chili sauce for glazing

300 g flour
2 tsp. baking powder
0.4-0.5 l water
1 tbsp. turmeric
1 tbsp. cayenne pepper
Coarse breadcrumbs
Salt and freshly ground pepper
3 eggs
Extra flour

Optional extra! Grilled & pickled red capsicum:
2 red capsicums
1 dl vinegar
1 dl water
1 dl sugar
1 fresh chili


In the kitchen

  • Start by mixing the dressing. Mix mayonnaise and chili sauce together. Then add the finely grated ginger, chopped chili and season to taste with honey, salt and pepper.
  • Rinse the lettuce and tomatoes, and let it dry. Slice the tomatoes, finely chop the onion, and set it all aside.
  • Mix all the ingredients for the rub.
  • Now the Orly-batter. Mix the dry ingredients together, and then add one egg at the time, while whisking. Then add the water, until you have a smooth crêpe-like batter.
  • Cut each of the chicken breast into halves, horizontally, and turn in the rub. Leave the chicken in the rub for a while to marinate. When ready, then turn then chicken in flour, then the Orly-batter and finally the breadcrumbs.

Optional extra!

  • Cut the tops of the capsicums and remove the seeds. (Prepare the grill for high, direct heat and the capsicum until black, with the lid on). Once grilled, place them in a plastic bag and put aside in the fridge. While the capsicums cool off, prepare the vinegar mixture.
  • Boil vinegar, water and sugar together and add chili to taste. Remove the blackened skin of the capsicums, cut into thin slices and add them to the mixture.


On the grill

  • Heat up a wok or deep frying pan, and add plenty of oil. When the oil is approx. 170-180C degrees, add in the chicken pieces. Turn over few times, so they get an even golden coloring. Once the core temperature of the chicken reaches 75C degrees, it’s ready.
  • Finally, grill the burger buns until golden with nice grill marks at direct heat.

Build the burger:

  • First the lettuce, then tomatoes and chopped onions.
  • Add the sweet & spicy dressing, and then the chicken.
  • Optional extra! Top off the chicken with the pickled capsicum and finally the top of the bun. Enjoy!
